4 slices NC country cured ham, cut about 1/4 inch thick, uncooked
2 Tbsp butter or margarine 1 tsp sugar 1/2 cup water

Directions:
Directions:
Place ham slices in unheated skillet. Turn heat to medium setting. Cook 2 to 4 minutes on each side or until lightly browned. (overcooking cause ham to be hard.) Put butter in skillet just as you torn the ham slices. Remove ham from pay. Pour drippings into a gravy bowl. Do not loosen ham particles from pan. Add sugar to the pan. When sugar begins to brown, add water and stir rapidly. Loosen ham particles as you stir. Heat to boiling. Mix into ham drippings and serve immediately. Red Eye Gravy is delicious served over ham slices or grits.

The Banks family always enjoys a hearty breakfast. We love country ham and scrambled eggs with shad roe or pig brains is a special treat.
I know breakfast is the most important meal of the day, I’m just saying that lunch is a close second…I like to call it brunch…and breakfast for supper is great too...I’m just saying…
