4 large baked potatoes

2/3 c. butter or margarine

2/3 c. flour

6 c. milk

3/4 tsp. salt

1/2 tsp. pepper

4 green onions, sliced

12 slices bacon, fried crisp & crumbled

1-1/2 c. shredded cheddar cheese

1 c. sour cream

Bake potatoes until done. Cut into halves and scoop out pulp., discard jackets. Melt butter in stock pot over low heat. Add flour, cook until smooth, stirring constantly. Cook for 1 minute longer, stirring constantly. Gradually add milk , cook over medium heat until thickened and bubbly, stirring constantly. Add potato pulp, salt, pepper, 2 tablespoons chopped green onion, 1/2 cup bacon and 1 cup cheese. Cook until heated through. Stir in sour cream. Serve topped with remaining green onions, bacon and cheese.
