1 lb. shrimp, peeled & deveined
2 T. butter divided
12 oz. can mushroom soup
1 green pepper chopped
3 T all purpose flour
3/4 t. salt
1/3 t. pepper (ceyenne)
1/3 c. milk
3 c. rice, cooked
1 c. shredded cheddar cheese divided

Directions:

Bring milk to boil and add the rice. Stir in the remaining ingredients and pour into a 1 1/2 qt. baking dish and sprinkle cheese over top. Bake at 325º for 30 to 35 min. Sprinkle remaining cheese over top and let stand 5 min.
