Nana's Buttermilk Fried Chicken Recipe

3 quarts trans fat-free oil or soy oil
4 cups all purpose flour
5 Tablespoons sea or kosher salt
1 Tablespoon cayenne
3 Tablespoon paprika
2 Tablespoons + 1/2 teaspoon black pepper
1 pint buttermilk
1 Tablespoon hot sauce, preferably Texas Pete's
2 whole chickens, 3-1/2 lbs. each, broken into 8 pieces of legs, thighs, breasts (cut in half).

Pour 3 inches of oil into a deep, heavy pot and heat over medium-high heat on stove. In bowl, combine flour, salt, cayenne, paprika & pepper. In another bowl, combine buttermilk, hot sauce, salt & pepper to taste. Dip chicken pieces first into buttermilk mixture. Then toss into flour mixture. Place coated chicken pieces on separate platter.

Preheat oven to 200º. Fry chicken in batches in a single layer in oil for about 15 minutes each side (one batch is probably 4-5 pieces). When each batch is done, drain well on paper towels and place in oven on a sheet pan to stay warm. Continue with frying until all chicken done. Serve with Nana's Gravy over German mashed potatoes. Eat it while it's hot!
