2 lbs. Good Quality Cheddar Cheese

2 Cloves garlic

1 tsp Worcestershire sauce


1/4 tsp Cayenne pepper

1/4 tsp Tabasco sauce


1/2 tsp Salt


1 Bottle stale beer of your choice (I used Miller Light, it has the appropriate flavor)

1/2 Onion, chopped fine (optional, I leave this out)

Directions:

Shred the cheese, mix with the garlic and onion.

If preparing in a blender, mix in half batches, if in large food processor mix all ingredients. Blend until smooth.

Place in tightly covered containers and refrigerate.

Serve with crackers, carrots, celery and radishes. Enjoy!!



**I find that it is best if it sits in the fridge overnight.** I gotta go... my Beer Cheese in in danger of disappearing! LOL

"Hall's" is a fabulous out of the way gem that is not quite on the way to anywhere, but worth the trip though the scenic Kentucky roadways especially in the lush green and blooming spring or in the fall when the leaves are turning and the mountains look like they are covered by an afghan of brilliant colors. It is also known for seafood and other regional favorites such as the Kentucky Hot Brown, Fried Banana Peppers, Country Ham and even Lamb Fries for the adventurous!
