2 T. graham cracker crumbs
8 oz. Nestle semi-sweet chocolate chips
1/4 tsp. vanilla
1/4 c. very strong coffee
8 eggs
1/4 c. sugar
Cool Whip

Directions:
Directions:
Preheat oven to 375ºF. Butter a 9 in. pie plate and sprinkle with graham cracker crumbs to dust plate. Melt chocolate chips on top of a double boiler. Add vanilla to coffee, then add to melted chocolate. Mixture will become ropey, but keep stirring until smooth again. Remove from heat. Separate eggs into two large bowls. Beat sugar into yolks until lemon colored. Pour chocolate mixture into yolk mixture and beat well. Beat egg whites until stiff and fold into chocolate mixture until well mixed. Pour half of mixture into pie plate and bake for 20 minutes. Refrigerate remainder. When pie is completely cool, pour remainder of mousse into baked pie in shell and refrigerate up to 6 hours. Before serving, top with Cool Whip. Pie is best when made and eaten on the same day.
