1 1/4 c black beans, rinsed and well drained (15 oz can)
1 1/4 c shoepeg white corn, rinsed and drained (11 oz can)
1/4 c red bell pepper, finely chopped
1/4 c green bell pepper, finely chopped
2-4 hot jalapeņo peppers (optional)
1/2 c red onion, finely chopped
1/2 c oil
1/2 c balsamic vinegar
1 1/2 T Dijon mustard
1/4 c fresh parsley, finely chopped (dry parsley can be used in place of fresh - adjust amount used)


Directions:

Toss all ingredients in a bowl and chill well before serving with chips.

Best when made a day ahead to allow flavors to blend.
