1 batch of Southern Cornbread-see recipe below
2 sticks (1 c.) butter
10-12 celery ribs, diced, including green leafy tops
1 large yellow onion, diced
3-4 cans chicken bouillion
3-4 T. rubbed sage
2 large eggs, lightly beaten

Directions:
Directions:
Prepare Southern Cornbread using recipe below. Crumble into chunks and set aside. Melt butter in pan and saute celery and onions over medium-low heat until tender, about 8-12 minutes. Combine celery mixture with cornbread. Add chicken bouillion and sage, adding sage to taste. Place in refrigerator overnight. Preheat oven to 350ºF. Add beaten eggs to cornbread mixture and combine thoroughly. Pour into large greased metal or Pyrex baking pan. Bake 50-60 minutes until golden brown and cooked through. Serve with turkey and lots of gravy! *You may use your own cornbread recipe. But remember, Southern cornbread is made with yellow cornmeal and little or NO sugar!
