1 lb ground beef
2/3 cup fresh bread crumbs
1 purple onion diced & caramel
1 egg lightly beaten
3/4 t salt
1/2 t pepper
1-15 oz can tomato sauce
2 1/2 T vinegar
2 1/2 T brown sugar
1 3/4 T Dijon Mustard
1 1/2 T worcestershire sauce
water to thin

Directions:
Directions:
In a sauce pan with a small amount of oil caramelize onions on med low heat. Chop cooked onions in a food processor. Mix beef, bread crumbs, caramelized onion, egg, salt, pepper and 1/4 of the tomato sauce. Make into a loaf and place in a shallow pan. Stir together the remaining tomato sauce,vinegar, sugar, mustard, worcestershire and water (if needed to thin)
Pour sauce over meatloaf and cook in a 350º oven for 45 mins to 1 hour. Baste every 15 minutes with the pan juices.
