1 coconut
½ cup butter
½ cup shortening
1 tsp. grated lime peel
2 cups sugar
4 eggs
3 cups flour
3 tsp. baking powder
½ tsp. salt
3 tsp. lime juice

Directions:
Directions:
Coarsely chop one cup coconut meat. Measure the coconut and add water to make 1 cup. Heat the coconut milk. Place coconut meat and hot coconut milk in blender; cover and blend until almost smooth. Set aside. Mix shortening, butter, & lime peel. Gradually add egg yolks to mixture and beat well. Sift dry ingredients together well, then add to creamed mixture. Mix well, add lime juice and coconut mixture. Fold in beaten egg whites. Turn batter into 2 greased 9-inch cake pans. Bake at 375 degrees for 30 minutes. Cool 10 minutes. Remove from pans. Frost with 7 minute frosting. Garnish with rest of coconut.
