¾ cup cooked rice
½ cup sugar
3 eggs
3 cups milk
1 tbsp. lemon extract
1 cup raisins
Nutmeg to taste

Directions:
Directions:
Preheat oven to 400 degrees. Spray an 8-inch square baking pan with nonstick vegetable coating. In a large mixing bowl, combine rice, sugar, eggs, milk, lemon extract and raisins. Stir well. Pour into prepared pan. Sprinkle nutmeg generously over pudding. Bake 30 minutes.
