1 package of Pinto Beans
1 Hamhock
1 Bell Pepper (diced)
1 White Onion (diced)
1 link of sausage (sliced)
1-2 jalapeņos, depending on how spicy you like it! (diced)
1 can of beer (the cheaper the better!)
1 Bunch of cilantro
Salt to taste
Garlic to taste

Directions:
Soak pinto beans in a bowl of water overnight. Rinse the beans before you put them in the pot. This makes them a beautiful color when they are cooked. Put the beans in a large pot with hamhock and fill with water until beans are completely covered. Season with salt and garlic. Simmer beans for 1.5 hours with lid cracked. Watch the water level to make sure the beans stay covered.

Once the beans turn a nice golden color, remove the hamhock. Add the bell pepper, onion, sausage, jalapeņos, cilantro leaves and beer. Continue to simmer for 1 - 2 more hours. Add more salt and garlic to taste.
