1 lb. ground turkey or chicken
1/2 sm. onion, chopped
5 stalks celery, chopped
5 carrots, chopped
1/4 c. grated ginger
2 cloves garlic, crushed
Salt and pepper to taste
4 c. flour
2 egg, slightly beaten
1 1/4 c. water
1 tsp. salt
Broth:
7 c. water
3 chicken bullion cubes
2 carrots, sliced
3 celery stalks, cut

Directions:
Directions:
Cook first 7 ingredients over medium-high heat in large skillet until meat is browned and carrots are tender. In a medium bowl, combine flour, eggs, water and salt, mix well. If mixture is too dry, add more water, 1 tsp. at a time. After mixing thoroughly, turn dough out on floured surface and kneed for 5-7 minutes. Take about 1/4 of dough and make into a ball. Roll out to 1/4 in. thickness and cut with a small cup to form circles. Place a spoonful of meat filling into center of circle, fold in half moon shape and pinch edges closed to seal dumpling. Set aside on lightly floured plate. Repeat with remainder of dough. Put all ingredients for broth into a 4 qt. pot. Bring to a boil. Once it is boiling, drop dumplings in as groups of 8 depending on how large they are. They should sink to the bottom and rise to the top when cooked, about 3 minutes. Monitor process and gently scrape any dumplings off bottom if they stick. *Serve with light sour cream or in broth as a soup.
