12 Slices white bread-crust removed
2-3 T. Butter, softened
1/2 C. Butter
1/2 C. Fresh sliced mushrooms
2 C. Thinly sliced onions
Salt and pepper
1/2 lb. Mild Italian sausage
3/4 - 1 lb. Grated cheddar cheese
5 Eggs
2 1/2 C. Milk
3 tsp. Dry mustard
1 tsp. Ground nutmeg
2 T. Parsley, finely chopped

Butter bread w/softened butter and set aside. In10" skillet, melt 1/2 C. butter and brown mushrooms and onions over medium heat for 5-8 min. or till tender. Season to taste w/s/p and set aside. Cook sausage and cut into bite size pieces. In greased 11x7" casserole, layer half the bread, mushroom mixture, sausage and cheese. Repeat layers ending with cheese. In medium size bowl, mix eggs, milk and remaining ingredients. Pour over sausage and cheese. Cover and refrigerate overnight. Sprinkle w/parsley and bake uncovered in preheated 350º oven for 1 hour or till bubbly. Serve with fruit salad and crusty bread.
