2 cups flour
2 1/2 tsp baking powder
1 tsp sugar
1 tsp salt
1/4 cup shortening
Milk

Sift together the dry ingredients. With pastry blender or fingers, cut in the shortening. Gradually stir in enough milk to make a soft dough that can be taken up and dropped by spoonfuls. Or, add only enough milk to make a stiff dough. Roll out quite thin and cut into squares or strips. Makes about 1 dozen dumplings

Cut 3 pounds of pork backbone into serving pieces and cook in water to cover until tender. Keep covered with a lid. Season to taste with salt and pepper after 1 hour of cooking. Add a piece of red pepper pod if desired. Place dumplings on top of meat, cover and cook for 15 minutes. Serves 6
