6 cups beef broth
6 large onions sliced thin
4 tablespoons butter
1 tablespoon oil
1/2 cup port wine
1/2 cup diced Colby cheese

Directions:
Directions:
Saute onions in butter and oil until limp.
Cover and simmer 15 minutes.
Add wine and broth. Simmer 60 minutes or more. More is better.
Ladle into individual bowls. Add diced cheese to hot
soup. Top with a slice of buttered toasted bread.
Sprinkle top with shredded cheese. Place in 425 degree
oven for 10 minutes. Turn on broiler and heat until cheese on is light brown.
