8 T Butter
8 T Flour
8 cups Milk
3 t crushed or chopped garlic
2 T mustard
1/2 t crushed red pepper
Salt - to taste
White Pepper - to taste
Hot Sauce - to taste
4 cups shredded sharp cheddar cheese
4 cups shredded cheese (any combination of cheddar, Colby jack, mozzarella and Parmesan)
2-3 lbs short pasta like (elbow, penne, zitti, shells)

Melt butter, add flour and stir at low temp for 1 min. Add all the milk and whisk constantly. Add garlic, mustard and spices. Bring to slow simmer to allow sauce to thicken (keep whisking). Once thick, turn off heat and add cheese. Mix until melted. Taste and adjust as needed.

Make pasta per package except cook Al dente', drain and put back in pan. Add sauce and mix thoroughly.

Spray 2 casserole dishes with non stick spray and pour mac n cheese into dishes. Add bacon on top if you want and then add bread crumbs and several pats of butter.

Cover in foil and bake at 350 for 45 mins. Last 15 mins take off foil to get nice crust
