1/4 cup butter
1 bunch leeks, sliced (use only the inside white portion of leeks)
1/3 cup onion, chopped
2 cups potatoes, peeled and diced
3 cups chicken stock (or 1 can chicken consommé diluted with 1 1/2 cup water)
Heavy cream
Salt and white pepper (to taste)
Green onion tops, chopped very fine (for garnish)

Directions:
Heat butter in a large sauce pan. Add sliced leeks and onion. Simmer about 5 minutes or until soft, but not browned. Add potatoes and chicken stock. Boil gently, 30 to 40 minutes or until potatoes are very tender. Press through fine sieve (or use food processor). Add cream and season to taste.

Serve hot or thoroughly chilled. Top with green onion tops for garnish.
