12 jalapenos (or however many you want)
1 brick cream cheese, softened
1 package of monterey jack / cheddar cheese cubes
1 package of bacon, sliced in half
Toothpicks

Directions:
Directions:
Preheat oven to 350º. Rinse, seed and slice jalapenos in half. Fill with cream cheese, top with one cheese cube, wrap with bacon and skewer with toothpick. Repeat! Bake for about 35 minutes or until bacon is cripsy. Don't eat right out of the oven or you'll burn you tongue off! Enjoy!

I stole this recipe from Andy Gitzinger, and it made me world famous among the Lantana crowd. Feel free to use it shamelessly too.

Warning: These suckers can make you cough and cause your hands to sting and your eyes to water, but it's worth it -- I promise! I found a 'special tool' that makes the de-seeding process easier. I'll buy you one as soon as I find another one! Don't touch your eyes for at least 12 hours after handling jalapenos. It's not pretty!
