2 medium potatoes, cubed (2 cups)
1 small onion, chopped (1/2 cup)
1 yellow bell pepper, chopped (1/2 cup)
1 tablespoon chili powder
1 teaspoon ground cumin
1 28 oz can undrained fire-roasted diced tomatoes
1 15 oz can rinsed kidney beans
1 15 oz can rinsed black beans
1 11 oz can rinsed corn
1 8 oz can no-salt-added tomato sauce
1 medium zucchini, cubed (1 cup)

In 4-quart crock pot, combine all ingredients except zucchini. Cover and cook on low 5-6 hours. Uncover, add zucchini and cook on high 15 minutes. Serve with sour cream, shredded cheese and sliced black olives as garnish, if desired.
