lobster or shrimp
1/2 lb lean pork
4 scallions (chopped fine)
1 1/2 tsp salt
1 tsp pepper
1/4 cup oil
1 celery stalk (finely sliced)
1 cup chicken broth
1/4 cup sherry or white wine
2 eggs
2 1/2 Tbsp flour
2 tsp soy sauce
1/4 cup water

Directions:
Directions:
Mince pork, scallions, 1/2 tsp salt and pepper. Heat deep frying pan with oil and 1 tsp salt. When hot, add pork, scallions, celery for 1 minute. Add shrimp and saute 1/2 minute, slowly add broth and bring to a boil - add flour, soy sauce and water and simmer. Beat eggs well and pour over shrimp - 1 minute. Serve immediately.

Sherry or white wine may be added to broth.
