2 eggs, slightly beaten
2-1/4 t. sugar
1 c. milk
1 c. flour
1 T. lemon extract

Directions:
Directions:
Add sugar to eggs, then add milk. Combine flour and salt. Stir flour into milk mixture until smooth.
Beat until about heavy cream consistency. Add lemon extract. Dip rosette wheels into batter and plunge into 360º hot oil. Use Crisco only. Pull wheels out when bubbling stops. if rosettes are not crisp, batter is too thick. Add milk to thin.
Note: Before frying your first one, dip into hot oil first so batter will stick to wheels. Also, do not submerge wheels into batter or they will not come off. 3/4 of the way up the sides of wheels is desired.
