1 1-lb pork tenderloin, trimmed
½ tsp sage
½ tsp salt
¼ tsp pepper

Cooking spray

1/3 cup red currant jelly
1 Tbsp white balsamic vinegar
½ tsp ground ginger

Directions:
Directions:
1. Slice pork crosswise into 12 pieces.
2. Place each piece between 2 sheets of heavy duty plastic wrap; pound each piece to ¾ inch thickness, using a meat mallet or rolling pin.
3. Sprinkle sage, salt, and pepper evenly over pork. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add pork; cook 5 minutes on each side or until done. Remove pork from pan; keep warm.
4. Add jelly, vinegar, and ginger to pan. Cook over medium-high at 2 minutes or until thick. Serve with pork.
