2 cups thinly sliced sweet onions
½ cup butter
¼ cup flour
1 ½ - 2 tsp salt
¼ tsp pepper
4 cups milk
6 slices French bread
6 slices Swiss cheese
Grated Parmesan cheese

Directions:
Directions:
Saute onions in butter in large saucepan over low heat until tender and transparent (20-30 minutes). Blend in flour and seasonings. Stir over medium heat until mixture is bubbly. Remove from heat. Gradually stir in milk. Bring to a boil, stirring constantly. When ready to serve sprinkle Parmesan cheese. Boil 1 minute. Serves 6.


Kim- This is the recipe from the Yakota Officer’s Club (Japan). They were well known for their onion soup- guess you would call it: Japanese Onion Soup- but the YOC is Yokota Onion Soup!
