5 large eggs
1 c. milk
1 1/2 tsp. Dijon mustard
1 tsp. dried basil
3/4 tsp. salt
1/8-1/4 tsp. ground red pepper
1 (9.5 oz.) pkg. frozen 5 cheese Texas Toast, chopped
3 plum tomatoes, seeded and chopped
8 fully cooked bacon slices, chopped
1 c. grated Cheddar cheese

Directions:

Whisk together eggs, milk, mustard, basil, salt and red pepper. Layer half of chopped toast in a greased 7x11 in. baking casserole dish; sprinkle half each tomatoes, bacon and cheese. Repeat layers. Pour egg mixture over ingredients. Cover and chill for 4-24 hours. Preheat oven to 325ºF. Bake for 50-55 minutes. *This is a super easy brunch casserole that can be done the night before! Use whatever diced tomatoes you have on hand.
