8 oz. uncooked rigatoni
1 T. olive oil
1 c. finely chopped onion, about 1 med.
3 c. chopped chicken
6 oz. bag fresh baby spinach, chopped
1 (14.5) can Italian-style diced tomatoes
1 (8 oz.) chive and onion cream cheese
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 c. (6 oz.) shredded mozzarella cheese

Preheat oven to 375ºF. Prepare rigatoni according to package instructions. Spread oil on 7x11 in. baking casserole dish; add onions. Bake for 15 minutes or just until tender; transfer to large bowl. In large bowl with onions, stir in rigatoni, chicken, spinach, tomatoes, cream cheese, salt and pepper. Spoon mixture into baking dish and sprinkle with cheese. Bake for 30 minutes covered; uncover and bake for another 15 minutes. *This is my "go-to" recipe for potlucks! I usually end up using more cheese than the recipe calls for.
