10 oz extra lean ground turkey, browned
1 medium onion, diced
2 red peppers, diced
4 celery stalks, diced
2 medium zucchini, diced
2 medium yellow squash, diced
2 (28 oz) cans Hunts diced tomatoes
1 (15 oz) can black beans, rinsed
1 (15 oz) fat free reduced sodium beef broth
1 (1 1/4 oz) pkg dry chili seasoning
1 (1 1/4 oz) pkg taco seasoning
1 sm can of Hunts tomato paste
2 tsp salt

Combine all above ingredients. Bring to boil. Turn down and simmer 2-4 hours.

1 cup is just 1 point on weight watchers. Great as a cup of soup or add to salad to make taco salad.
