6 flour tortillas
1 can re-fried beans
8 oz sharp cheddar cheese (grated)
8 large eggs
10 oz salsa
6 strips bacon or sausage
1/2 cup vegetable oil
1 tbsp. sour cream

If you substitute Velveeta for real cheese, you could just go to Taco Bell instead and save a bunch of time and money. Don't get me started.

1) Combine eggs and sour cream, whipping lightly.

2) Fry up your bacon and/or sausage on medium heat, erring on the side of crispy, as they will soften a little in the finished product. Set aside on a paper towel to absorb excess grease. Drain 75% of grease in pan, saving the rest to scramble eggs in.

3) Begin heating oil in a separate pan over medium heat.

4) Scramble eggs over medium-low heat, until bacon grease is absorbed. Increase to medium heat and add salsa, stirring to allow the heat to bring out the roasted salsa flavor. Eggs are ready when they've absorbed most of the moisture. Cover and keep on warm heat only.

5) Heat beans in a microwave container for about 2 minutes.

5) Prepare a plate with a paper towel on it to absorb excess oil from tortillas.

6) Fry tortillas individually for about 25 - 35 seconds per side, or until you achieve a light golden color on each side. Place on paper towel to drain excess oil.

7) Spread 1 tbsp. beans on tortilla, then 2 tbsp. eggs, top with meat and cheese. Roll it all up, and place in mouth.

Crispy hash-browns are amazing in this taco, but may add 15 min to prep time.
