1 12-14 oz. eggplant, cut into 1/2 inch rounds
1 zucchini, cut into six strips lengthwise
1 red bell pepper, cut lengthwise into 8 strips
1 medium onion, cut into 1/2 inch rounds
3 Tbsp. garlic-flavored olive oil

2-3 tsp. balsamic vinegar
2/3 cup crumbled feta cheese
2 Tbsp. slivered fresh basil

1. Prepare barbecue grill.

2. Coat veggies with olive oil, salt and pepper.

3. Grill veggies until tender and tinged with brown, turning frequently (about 6 minutes for eggplant and zucchini and 10 minutes for pepper and onion.)

4. Cool and chop into large bite-sized pieces. Drizzle with vinegar, and mix in feta cheese and basil.
