10 large sprigs fresh rosemary
6 large sprigs fresh basil
4 large sprigs fresh oregano
12 cloves garlic, peeled and halved
10 dried tomato halves
1 tsp. black peppercorns
3 (32 oz.) bottles red wine vinegar
Fresh rosemary for garnish

Directions:
Directions:
1. Twist stems of herbs gently, and press garlic with back of spoon. (Herbs must be dry or vinegar will be cloudy.) Place herbs, garlic, dried tomatoes and peppercorns in large glass container.

2.Heat vinegar if you want to hasten process. I bring it just to a steam point as boiling it may change its acidity. Pour over herb mixture and cover with non metallic lid.

3. Let stand 2 weeks. 6 weeks if you don't heat the vinegar.

4. Strain out the solids and bottle. Use rosemary stem for decorative garnish if desired. Store in cool dark place.
