6 or 7 medium sized sweet potatoes
butter
brown sugar
marshmallows

Directions:

1. Peel and cut potatoes into large chunks. Cover with water, boil on stove until tender (test by piercing with a fork).

2. Remove from heat, drain.

3. Add 1/2 stick to full stick of butter or margarine (1/4 to 1/2 cup), cut into chunks.

4. Mash to the consistency you like - more coarse and chunky, or smooth.

5. Add brown sugar while mashing or after, 1/2 cup of brown sugar or more, depending on your taste.

6. Put in a deep baking dish, cover the potato mixture with the marshmallows, marshmallows standing on end. Leave about 1/4" space between marshmallows.

7. Bake in 350º oven until marshmallows are browned. Serve while warm.

This is a traditional Vanderheiden dish, always served at Thanksgiving and Christmas.

Extra note: When browning in the oven, if you are in a hurry and want to use the broiler, make sure to watch it closely! Also, observe from photo what can happen when the marshmallows stand above the rim of the baking dish...
