Ingredients: 2 packages active dry yeast 1/2 cup warm water, 105-115 degrees 1 1/2 cups milk, scalded, then cooled 1 cup sugar 1/2 cup butter or margarine, melted 1 teaspoon salt (optional) 3 eggs, slightly beaten 5 1/2 to 6 1/2 ups all purpose flour 1 teaspoon vanilla 1 teaspoon cardamom

Directions:1. Scald milk on stove, let cool to less than 130º 2. Dissolve yeast in 1/2 c. water (105-115º) 3. Add sugar, melted butter, eggs, salt, vanilla and cardamom to cooled milk. Stir until smooth. 4. Add dissolved yeast, blend. 5. Add 4 c. flour, mix until smooth. Add remaining flour gradually until dough pulls away from sides of mixing bowl and is not sticky to touch. 6. Put dough on lightly floured surface; knead until smooth and elastic, about 5 min. 7. Place in greased bowl, turn greased side up. 8. Cover, let rise in warm place until doubled in size, about 1 1/2 hours (dough is ready when indentation remains when touched. 9. Punch down. Cut pieces from dough ball, shape into men. Dough will be elastic Try not to overwork the pieces.
Overworking makes the Yule Gubs turn out feathery looking, not smooth. Keep Gubs tall, or they'll scrunch up while rising. 10. Let rise again until doubled in size. 11. Bake at 350º until golden brown, checking that bottoms don't get too done. 12. Glaze with mixture of "strong" coffee, butter and dissolved sugar. Sprinkle with sugar. 13. Cool on wire racks, or Gubs may be soggy after glazing with coffee mixture. |

Notes: Every member of our family has enjoyed their own Yule Gub on Christmas morning since my mother's grandparents first settled up north in Vilas county from Finland. This recipe comes from the 'Old Country'. Great-grandmother Maria Staffen turned out dozens of these rich, sweetbread treats for all of her children, plus their spouses and little ones. Later our grandmother, Frieda Jefferson, continued the tradition by sending packages of Yule Gubs and Swedis brown bread to us down in southern Wisconsin. When Kim and Adam were little, they received pint-sized Yule Gubs! The Yule Gubs were a little dry, considering the time between being baked and when Christmas morning finally arrived. But spread with butter and warmed in the oven or microwave...yumm!!!
