6 c. thinly sliced raw potatoes
1/2 c. butter, divided
4 T. flour
1 1/2 tsp. salt
4 c. half-and-half
2 T. chopped green onion
1 c. quality cheese, shredded (Cheddar, Gruyere, etc.) or a combination
Black pepper to taste

Directions:
Directions:
Slice potatoes. Melt 1/4 c. butter in large saucepan; add flour and salt, and stir until slightly browned. Gradually add half-and-half and green onion; cook slowly until thickened. Reduce heat and stir in cheese to melt. Season with pepper and additional salt, if desired. Add potatoes and warm slightly, making sure slices are all coated. Pour into greased 9x13x2 in. baking dish; dot with remaining butter. Bake at 350ºF for 1 hour and 15 minutes. Serves: 8.
