Nana's Lasagna Roll-Ups Recipe

8 cooked lasagna noodles

Sauce:
1# Italian sausage
1/2 c chopped onion
1 clove minced garlic
1 t oregano
1/2 t basil
1 1/3 c (2-6 oz cans) tomato paste
1 2/3 c water
(For thinner sauce use 1- 6 oz can tomato paste & 1- 8 oz can tomato sauce + almost twice the amount of water-according to taste)

Filling:
1-10 oz package chopped spinach: cooked and thoroughly drained.
2 c (1 pint) ricotta cheese
1 c grated Parmesan cheese
1 1/2 c shredded mozzarella cheese
1 slightly beaten egg
salt/pepper

Directions:
Directions:
Brown sausage with onion and garlic. Pour off fat and add tomato paste and sauce,water, oregano, & basil. Cover and boil gently for 20 minutes.

Combine spinach, ricotta cheese, Parmesan cheese, 1 c mozzarella, egg, salt/pepper.

Spread about 1/2 c mixture on each noodle. Roll it up and place seam side down in 12" x 7 1/2" baking dish. Pour sauce over rolls, sprinkle remaining cheese over the top, and bake in 350 º oven for 30-40 minutes.
(This dish may be prepared ahead and refrigerated. Bake @ 350º, covered 10-15 minutes. Remove cover and continue baking for 30 minutes or until heated through.)
