2 1/2 lb ground beef
1 large onion diced
1 tsp cumin seed powder
1/2 tsp pepper
1 tsp salt
1/2 tsp garlic powder
1 can enchilada sauce
2 8 oz cans tomato sauce
1 can diced or whole green chiles
1 can diced or sliced black olives
1 lb longhorn cheddar cheese grated
1 dozen tortilla shells

Directions:
Directions:
Put beef and onion in a waterless skillet and cook thoroughly, drain off grease. Add cumin powder, pepper, salt, garlic powder, enchilada sauce and tomato sauce simmer 15 minutes.
Strain meat and collect sauce in a bowl to us to soften tortillas. Dip tortillas one at a time in the sauce then place in a baking dish. Fill each tortilla with meat mixture, cheese, chiles and olives. Roll filled tortillas and cover with remaining strained juice. Sprinkle with cheddar cheese and bake at 350º F for about 10 minutes until heated through and cheese is bubbly.

You can add additional seasonings to taste. We use mild enchilada sauce, if you want it zestier use hot enchilada sauce or add diced jalapenos.
