5 medium green globe artichokes
1/2 cup olive oil
1/2 cup balsamic vinegar
3 cloves garlic, chopped
2 tablespoons chopped fresh rosemary leaves
1 lemon, juiced
Salt and pepper

Directions:
Directions:
Cut 1/3 of top off artichoke. Cut tips and stem off. Stand artichokes in a steamer basket with 3 " water. Cover and boil until fork tender at the base, about 25-40 min. Split cooked artichokes lengthwise. Scoop out "choke" (fuzzy center). Mix rest of ingredients in the a shallow baking dish. Place artichokes, cut side down, in marinade. Cover, refrigerate until ready to grill, up to 1 day.
GRILLING: Remove artichokes from marinade, save marinade for basting. Place artichokes, cut side up on grill for 5-7 minutes until deep golden brown. Brush with marinate, then turn and grill until golden brown again. Brush with more marinade and remove. Can be served hot or at room temperature.

If using a pressure cooker, cook for 12-14 minutes after pressure is up.
