1 lb. green split peas (16 oz. pkg)
1 or 2 meaty ham bones or hocks
1 1/2 C diced onion
1 t. salt
1/2 t. pepper

Directions:
Directions:
Cover peas with 2 quarts cold water and simmer gently for 2 mins.; remove from heat, cover and let stand for 1 hour. Add bone, onion, salt, pepper and 1/4 of any or all of the following spices you have on hand: sage, thyme, parsley, curry powder, tarragon, sweet basil. Bring to boil; cover and reduce heat. Simmer (do not boil), stirring often for approximately 2 1/2 hours or until desired consistency. After cooking about 2 hours, take bones out, cut off ham and put ham bits in soup.
[The spices add a touch of flavor, but the soup is still delicious without any or all of them.]
