1 lg. sweet onion, sliced
1/4 tsp. each salt and pepper
2 T. olive oil
2 c. canned tomatoes, diced
1 c. sharp cheddar cheese,
3/4 c. Parmesan cheese, grated
1 c. mayonnaise
2 T. fresh basil, chopped
8 oz. party round crackers (2 sleeves), crushed
1 sm. tomato, sliced (optional)

Saute onion, salt and pepper in oil. Combine cheeses, mayonnaise and basil in a bowl. Mix well. Spray or butter a 1 1/2-quart round baking dish. Put one-third of cracker crumbs on bottom of dish. Pour one cup of tomatoes over crumbs and half of onions over tomatoes. Cover with another one-third of cracker crumbs. Repeat tomato-onion layer. Spread cheese mixture over tomato-onion layer and top with remaining crumbs. Garnish top of pie with tomato slices, if desired. Bake in 350º oven for about 45 minutes.

This recipe is a version similar to one served at Mary Mac's Tea Room. Some recipes call for a pie shell, but we use a round casserole dish instead--sort of looks like a pie!
