2 tsp. chopped fresh sage
2 tsp. chopped fresh rosemary
1/2 tsp. freshly ground black pepper
2 garlic cloves, minced (or pressed)
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/4 cup olive oil
1 pork tenderloin (about 1 1/4 to 1 1/2 lbs. trimmed)
1 crusty baguette

Directions:

1. Mince together the sage, rosemary, garlic, salt, and black pepper. Set aside.

2. Put 1 tbsp. oil in skillet on med-high heat. Brown pork until golden on all sides, 8-10 min.

3. Roll the pork in the herb mixture.

4. Halve the bread lengthwise and scoop out the soft insides. Brush the inside with remaining olive oil.

5. Place pork inside bread. Trim ends if there is extra bread. Tie closed if necessary.

Preheat oven to 375º. Place pork on baking sheet and roast until done, 155º on meat thermometer or about 25 minutes. Remove from oven and let rest 10 minutes. Cut into slices to serve.

For a larger group, cut a boneless loin to bit inside a larger piece of bread like the Monterey sourdough loaf at Food Lion and increase above ingredients in proportion to wt. of meat.

Best when bread is hard on outside.
