Ingredients: 3 medium sized sweet potatoes 1/4 c. butter 3/4 c. sugar Milk

Directions: |
Directions:Peel and slice sweet potatoes. You will want to use a heavy skillet with a tight-fitting lid for this dish. Cover sweet potatoes with sugar. Add 1/4 c. butter. Then add just enough milk to barely cover the sweet potatoes. Cook over medium heat with the lid on until sweet potatoes are tender.
Then take the lid off, turn down the heat to low and let the dish simmer until the liquid becomes a syrup. |

Notes: Aunt Margie was my dad's oldest sister and was the #1 kitchen helper to make sure the large Kelsay family was fed. During the tough times of the Depression , my Grandpa Kelsay was well-known for inviting friends and neighbors to join his family for Sunday dinner after church. I have heard many stories from my dad and his sisters about killing chickens after church and cooking dinner for a large number of family and guests. Still, today it seems like the Kelsay's are happiest gathered around the dinner table, sharing good food and family stories.
The secret to this dish is getting just the right proportion of sugar and butter to turn the sweet potatoes into an oeey, gooey delight. I sometimes add just a bit more sugar when it becomes clear that the syrup is not quite sticky enough!
