2 Tbsp. butter or olive oil
1 small onion, chopped
1 stalk celery, chopped
1 carrot, cut in rounds
1 sweet potato, cut in chunks
1 butternut squash, peeled and cut in pieces
32 oz. vegetable or chicken broth
Salt and Pepper
Add a sprinkle of curry powder and paprika to your liking.

Sauté onion, celery, carrot in the butter or oil about 5 minutes. Cut the squash and sweet potato in chunks place in a shallow pan and sprinkle lightly with olive oil. Bake squash and sweet potato in 350-degree oven for about 30 minutes or until soft. When done add all ingredients in a pot with the broth. Simmer about 40 minutes. Blend or puree in small batches in blender. Serve with warm crusty bread.
