3 lb Pork Loin cut into 1 in. cubes
2 tsp kosher salt
4 tbs olive oil
1 c orange juice
1 large onion, sliced thin
1 tbs chopped garlic
1 tbs ground cumin
1 tsp ground coriander
1/4 tsp chili powder
2 tbs all purpose flour
2 c chicken broth
8 cilantro stems
1 bay leaf
1 c chopped fresh or canned tomatilloes
1 c chopped fresh or canned tomatoes
1 4 oz can green chiles, chopped

Directions:
Directions:
Saute pork in 1 tbs hot oil until well browned. Transfer to a bowl. Poor off any oil and wipe out the pan. Add onion and 2 tbs oil to pan and cook until golden. Add garlic, cumin, coriander, and chile powder and stir. Add flour, stir constantly for about 1 minute and then add orange juice and chicken broth. Stir to blend, bring to a boil, add pork and turn down the heat to a low simmer.
Add cilantro and bay leaf. Cover pot and simmer for about 1 hour; then add tomatillos, tomatoes, and green chiles. Continue to simmer until pork is tender. Serve over rice or polenta.
