1/4 cup butter
1 cup onions
4 cups cooked white rice
1 cup cream style cottage cheese
1 large bay leaf crumbled
1 cup sour cream
1/2 tsp. salt
1/8 tsp. pepper 3 - 4oz. cans green chilies drained and halved lenght wise
2 cups grated sharp natural cheddar cheese

pre heat oven 375º grease 13x9 inch pan
heat butter in large skillet saite onion untill golden about 5 min.remove from heat stir in hot rice,sour cream,cottage cheese,bay leaf,salt and pepper
toss lightly to mix well
layer half of rice mixture in bottom of baking dish, then half the chillies sprinkle with half of cheese and repeat again.bake uncovered 25 min. or untill bubbly and hot. sprinkle sprinke with chopped parsley

to prepare 4 cups fluffy white rice
in large sauce pan 21/2 cups cold water to boiling add 1 cup converted rice and 1 tsp. salt cover tightly and cook over low heat untill all water is absorbed 25min.
