2 cups flour
1 Tbsp sugar
1 tsp salt
4 tsp baking powder
1/2 tsp cream of tartar
1/2 cup butter, cold
1 cup milk
1 cup grated cheddar cheese

Directions:
Directions:
Put all dry ingredients into a bowl, stir. Add cheddar cheese, stir. Cut butter into small pieces and cut into the dry mixture until it is the texture of oatmeal. Make a well in the center and pour in milk. Stir gently just until combined. Scrape dough onto a floured board. Sprinkle the top of the dough with flour if it is too sticky to handle. Using just your hands, pat the dough into a rectangle shape. Use a sharp knife and cut the dough into squares. Bake on a cookie sheet (sides not touching) at 450 for about 12 minutes, until just lightly browned on the edges. Serve warm.

I am often asked to make these biscuits. Once I made them for a wedding reception at the bride's request; I made enough biscuits to feed 150 people! The key to these biscuits is to use very cold butter and to handle the dough lightly. They should have a feathery texture when you break them open.
