2 avocados, diced
1/4 cup fresh lemon juice
1 1/2 cup fresh mozzarella cheese, cubed
1/3 cup oil ( I use Canola)
2 tomatoes, chopped
1/2 cup black olives, sliced
1 can corn, drained
2 green onions, chopped
salt and pepper

Directions:
Directions:
Toss the diced avocado in a bowl with the lemon juice to keep it from browning. Toss the cubed cheese in a separate bowl with the oil. Combine remaining ingredients and toss gently together.

This salad is colorful and so delicious; make sure to use fresh lemon juice for a nice zingy flavour.
