6 Chicken cutlets
3 tbsp. Flour
1 tsp. Paprika
1 1/2 tsp. Salt, divided
4 tbsp. Butter
4 tbsp. Oil
1/4 c. Sherry
1 tsp. Cornstarch
3/4 c. Half and Half
1/3 c. Chablis Wine
1 tsp. lemon juice
1/2 c. Muenster Cheese, grated

Directions:

Shake chicken in a ziploc bag with flour, paprika and 1 tsp. salt. Brown in frying pan with butter and oil over Medium High heat. Add sherry, cover and simmer 20 minutes. Remove chicken and place in baking dish. Blend cornstarch, remaining salt and half and half. Stir in pan drippings. Cook until thickened. Add Chablis and lemon juice, continue to heat. Place sauce over chicken. Sprinkle with cheese. Place under broiler to melt.
