10 slices bacon
20 large sea scallops
1 cup whipping cream
2 Tbsp mustard (dijon)
2 Tbsp maple syrup
fresh chives (snipped) (optional)
lemon juice

Directions:
Directions:
Bake bacon in 350º oven until pale golden. Wrap cooled bacon around scallops and secure with toothpicks. Drizzle with lemon juice. Preheat oven to 400º. Bake scallops for 10 minutes.

In sauce pan, boil cream 3 minutes, add mustard and syrup and boil until thickened (3 minutes). Season with salt/pepper.

Serve sauce on plate and top with scallops. Sprinkle with chives and serve.
