1 lb. Ground Beef
1 tbsp. Olive Oil
1 c. Onion, chopped
4 c. Hot Water
½ can Beef broth (if desired, taste first)
1 c. each Carrots, Celery, Potatoes, cut up
1/8 tsp. Basil
2 tsp. Salt
½ tsp. Pepper
3-4 tsp. Watkins Beef Soup & Gravy Base (purchased on internet) or 3 tsp. of meat extract or bouillon cubes
1 Bay Leaf, crumbled
1 (14.4 oz.) can Tomatoes, crushed

Brown beef in oil in deep skillet. Add onions, cook 5 min. more. Add rest of ingredients, except tomatoes. Bring to boil. Cover, simmer 20 min. or longer. Add tomatoes, cover and simmer 10 min. longer. Add Swansons beef broth if you feel it needs more flavor. If you like it thicker, mix a little corn starch and water together and add to soup.
