1 1/2 c. acorn or butternut squash, pureed
1 c. firmly packed light brown sugar
3 lg. eggs
3/4 c. evaporated milk
1 1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground ginger
1/4 tsp. salt
2 T. flour
1 tsp. vanilla
1 T. butter, melted

1 9-in. pie crust

Directions:
To cook squash: Cut medium size squash in half, remove seeds and place cut side down in a 13" x 9" pan. Add about one inch of water and cover with aluminum foil. Bake in 350º oven for about 30 minutes. Squash is done when a fork pierces it easily. Let squash cool. Scoop squash out of the shell and puree with a food processor or hand mixer until smooth. Combine squash with sugar and beat with a hand mixer. Add in all other ingredients and continue to beat (mixture will be soupy). Pour into pie crust. Bake in preheated 350º oven 45-55 minutes or until set.
