3 c bread flour
1/4 t yeast
1 T salt
1 5/8 c tepid water

Mix ingredients and leave in bowl overnight (uncovered). Divide dough into 2 loaves. Place two
dish towels on counter and coat with flour or
cornmeal. Place one half of dough on each dishtowel and loosely cover dough with other half
of dishtowel, let set on counter 2-3 hours, Preheat
oven to 450 degrees with baking dishes with lids
in oven. When oven is preheated, remove dishes
wipe with olive oil, add 1 piece of dough to each
dish and turn to coat dough with oil. Bake 23
minutes with lid on. Remove lid and bake 7 more
minutes with the lid off. Cool slightly on a wire
rack and serve
